Daring Bakers' Challenge May 2015 Lamingtons

This month's challenge was Lamingtons the classic Australian treat. This was such a joy to make. The sponge cake recipe uses cornflour (cornstarch) instead of plain (all-purpose) flour which results in a very light airy crumb for the sponge.
