Daring Bakers' Challenge May 2015 Lamingtons

This month's challenge was Lamingtons the classic Australian treat. This was such a joy to make. The sponge cake recipe uses cornflour (cornstarch) instead of plain (all-purpose) flour which results in a very light airy crumb for the sponge.

Blog-checking lines: For the May challenge Marcellina from Marcellina in Cucina dared us to make Lamingtons. An Australian delicacy that is as tasty as it is elegant

This post will have to short and sweet since I'm very busy.
